Tenderloin Filet Steak

The tenderloin, popularly know as filet mignon, is the most tender cut of meat on the cow. A cross-cut of the long, boneless tenderloin muscle, it is also the most lean of the trinity of premium steaks (New York and ribeye are the other two).

Each 5-ounce filet is approximately 1-1/2-inches thick.
