The tenderloin, popularly know as filet mignon, is the most tender cut of meat on the cow. A cross-cut of the long, boneless tenderloin muscle, it is also the most lean of the trinity of steaks (New York and ribeye are the other two). Each 7-ounce steak is about 2-inches thick.
