This bone-in roast comes from the hog's lower front shoulder, and has plenty of marbled fat to keep it juicy and tender while it cooks. The shoulder is a great cut  for braising, a jumping off point for pulled pork sandwiches, carnitas, ragu for pasta or polenta, cochinita pibil, or the classic Puerto Rican pernil. Our roasts average 3-1/2 pounds.
