The flatiron was once known as the top blade steak. The single-muscle cut comes from the chuck, or shoulder, and is beloved for its juiciness, flavor and tenderness, which is second only to the tenderloin. The thin, flat steak should be cooked quickly, and is a popular choice for satay, stir fry, tacos, or simply grilled and served with salsa verde.
