The Tri-Tip Steak is a boneless steak cut from the tri-tip roast located in the bottom sirloin. It's a great choice for the grill, and for spice rubs and marinades. Because of its irregular shape, consider cutting the tri-tip in large chunks for more even cooking. Choose your size:

Small: 1-1/2 pounds average, weighing between 1.25 and 1.65 pounds

Medium: 1-3/4 pounds average, weighing between 1.65 and 1.90 pounds

Large: 2-1/4 pounds average, weighing between 2.1 and 2.5 pounds
