Pastured Chicken
The Cornish Cross chickens from Hawkins Sisters Ranch are truly free-range, frolicking on pasture where they snack on bugs and grubs.
Raised in open air hoop houses on a deep bedding of sustainably harvested, soft-wood chips, the birds are fed a custom-blend of local wheat and peas mixed with minerals, fishmeal and enzymes.They have a generous rotating yard in the hay field and never receive hormones or antibiotics.
The birds are harvested at 9 to 10 weeks old and have rich chicken flavor and lots of tender breast meat.
Small birds average 4 to 4-1/2 pounds.
Large birds average 4-1/2 to 5 pounds.

Fourth-generation rancher Mary Hawkins has never been able to resist the lure of the Wallowa Valley. Adventurous and spirited as a youth, she went to the high mountains to work as an horse outfitter, and later to Smith College where she studied and rowed. Still, she never stopped thinking of the Wallowa Valley as home and took every opportunity to return to and work in her rural community.
Wanderlust took Mary on a cross-country bike trip and to many countries, but a stop in Glenwood, New York was a game changer. As she raised goats and studied slaughter capacity, Mary began to imagine the possibilities available if she were to return to Wallowa. Today, Mary has her own processing facility and, together with her partner, is improving elements of the supply chain and poultry production for herself and other small scale producers.
