What Will it Cost?
Because you are investing in a live animal, we are required to sell it by its “hanging weight,” or the weight of the hanging side of beef when it arrives at the meat shop. Our prices are for hanging weight per pound.
Once the side of beef is cut and wrapped and the bones and extra fat are removed, you’ll be left with about 65% of the hanging weight in packaged cuts for your freezer. (This is often called the “cut-out” or “finished cut weight.”)
Our prices are based on our actual costs of production. To give you an idea of the price per pound you’ll pay for Carman Ranch beef, we have compared the hanging weight price to the average yield or take-home weight. We’ve also identified the total cost of getting the animal to you, including harvest, processing and delivery.
Quarter Cow
The hanging weight of a quarter ranges from 130 to 175 pounds. The hanging weight price for a quarter is $3.90/lb. or between $507 and $663. The finished cut weight from a quarter will be between 83 and 112 pounds, making the cut, packaged meat that we deliver to you $6.09/lb.
Half Cow
Halves range from 260 to 350 pounds. The hanging weight price for a half is $3.80/lb. or between $988 and $1292. The finished cut weight from a side of beef will be between 166 and 217 lbs. making the cut, packaged meat that we deliver to you $5.93/lb.
Whole Cow
The hanging weight price for a whole cow is $3.70/lb. and ranges between $1920 and $2516. The finished cut weight price is $5.78/lb for the cut, packaged meat that we deliver to you.
All of these prices include the $65 on-farm harvest fee and a $.60/lb. processing fee charged by Valley Meat Service in Wallowa.
